Coffee cake is one of those devilishly delicious treats to have with breakfast or a quick snack.  You can buy frozen coffee cakes, mixes, and pre-made cakes in the grocery store, but nothing is quite as good a freshly made coffee cake from scratch.  Below is my favorite coffee cake recipe from scratch and a couple of alternative suggestions you may love. Let us get started making magic in the kitchen.

The ingredients you will need to make this delicious coffee cake recipe from scratch:

Coffee Cake Batter

2 Cups – All Purpose Flour
3 Teaspoon – Baking Powder
1 Teaspoon – Salt  (Can be reduced to ¾ Teaspoon)
3/4 Cup – Sugar
1 Egg
1/3 Cup Vegetable Oil
1 Cup Milk

Coffee Cake Cinnamon Crumb Topping

½ Cup – All Purpose Flour
¾ Cup – Sugar
6 Tablespoons Butter – Softened
1 Teaspoon – Cinnamon (This amount can be varied up or down to satisfy your taste.)

Before beginning mixing turn your oven on to preheat to 375 degrees.

Directions for mixing your fabulous coffee cake recipe from scratch:

In a large mixing bowl combine all of the dry ingredients and gently fold them together with a fork.  This ensures all of the dry ingredients are thoroughly blended before adding your liquids.

Place the egg is a separate bowl and beat until frothy.  Add your vegetable oil and milk to the egg and mix thoroughly.  Add the liquid mixture to your dry ingredients.  Stir thoroughly with a fork until the mixture is smooth and well blended.

Lightly butter and flour a cake pan.  Scrape your coffee cake mixture into a round or square cake pan, be careful not to overfill or the cake will flow over the sides as it rises.  If you have excess batter you can bake it in a separate baking cup of small pan.  Set the pan to the side for a moment.

Preparing the Coffee Cake Crumb Topping

Now you are ready to mix up the most delicious part of your coffee cake recipe from scratch, the crumb topping.  This step is very easy.  Just combine all the ingredients into a small bowl and mix with a fork.  The mixture will be clumpy and rough, which is perfect.

Once you have mixed the topping, you can carefully drop the topping over the entire surface of your cake batter.  The coffee cake is now ready for baking.  Place it on the middle rack of your preheated oven and bake for 20-25 minutes.  You can test the cake by inserting a toothpick and checking to make sure it is clean when removed.

Alternative Topping for Coconut Coffee Cake Delight

If you would like to try a little twist on this coffee cake recipe you can try this fun alternative topping.  Here are the ingredients you will need:

¾ Cup – Brown Sugar tightly packed
1 Cup – Sweetened Coconut Flakes
½ Cup – Softened Butter
¼ Cup – Sweetened Condensed Milk
½ Cup – Chopped Pecans

You can wait to mix up this topping after you put the coffee cake in the oven.  Just mix up all the ingredients and have it ready when the coffee cake finishes baking.  Take the coffee cake out of the oven for a moment and gently sprinkle the topping over the top.  Place back in the oven and turn on the broiler for approximately 2-3 minutes to light brown the topping.  (Watch closely)
